What About Dinner?
Today's title is a quote from Flushed Away and The Emperor's New Groove :) Love them both! Haha anyways!! Dudes. I'm so back in college!! I love my new house and having Kiersten as a roommate is awesome (she just got engaged! Eek!). All the girls that live in my house are so sweet and fun and my Homechop is just downstairs in my basement! XD Can't get much better than this :) So since I'm off on my own again, obviously I have to start cooking for myself again. Yay! :D Except I don't like buying food. So much money. I need a new job! Ahem, anyways. Tonight I decided to make an easy, yet delicious (as my friend Danny revealed while he was scarfing down a plate of this goodness. Glad to know boys like my cooking!) meal. Tuna Noodle Casserole! Stop right there. I know what you're thinking. Ew. A casserole first off is always sketchy, but add tuna in there (which I absolutely love)? No one will want to eat it. But I'm serious!! This stuff is fantastic! But don't just take my word for it, try it out yourself :)

Peanut Butter Cookies
Oh my goodness, oh my goodness. It's my last day at work!!! Oh such mixed emotions! I'm way glad to not have to be waking up at 4:20 a.m. anymore (way, way too early, folks), but I am going to miss my co-workers and good friends I've made this summer. So, since this is my last day, I brought cookies to work!! I brought Peanut Butter cookies (I just didn't put on the kisses) and Volcano cookies :) But guess what? So I get to work and it's a normal, hot, sweaty day, up until around lunch time. I noticed no one was going on break. Weird, usually people are pretty dang good at not forgetting their break ha ;) I just so happened to notice a present on my manager's desk and I knew what was going on!! They were throwing me a surprise party XD I totally knew it. But I pretended like I didn't! Eventually, everyone left, leaving just me and 2 other people working. They are so totally throwing me a party. Finally, we got to go up there and I was so right :) Awwww!!! They brought pizza, soda, and 2 DELICIOUS cakes. Flan and Tres Leches. So, so, so yummy. I even got presents! Diana gave me this really pretty bag that her mom made and my good friend Miguel (who was basically in love with me this summer bahaha) gave me gorgeous flowers :) Awww tender. I love the people I work with!! Shout out to you guys!! But I must say. I'm freaking excited to go back to SUU!! :D Go T-Birds!

Where Did the Summer Go?
So it's been flipping forever since I've posted on here and I'm terribly sorry for that. The summer has been cRaZy busy these past couple months! I still had time to bake and such though, of course ;) Wanna see what I've been up to?
To celebrate the 4th of July, my biggest bro, Dave, and I created our own rubs for some kabobs :) (Don't ask what we put in there, we kinda just threw stuff in) They were one of the tastiest kabobs I've ever had!
And since it was a patriotic celebration, I had to do something festive :)
Now this entire summer, my boss at work has been an absolutely FANTASTIC being and has brought us snacks and treats everyday :) So I decided to give back as well and bring some delicious treats! I sadly didn't get to take any pics :P But I made the scrumptious Mint Brownies and Dulce de Leche Brownies :) (The Dulce de Leche brownies were a HUGE hit among my Latino co-workers :) )
Being freaked out by an Emu at an awesome FHE is always fun :)
Family reunions in a freaking nice cabin are always essential.

Almond Joys are one of my favorite candy bars EVER, so why not make my own?
K and it's flipping hot in my work place, so I'm always craving ice-cream. But sometimes store bought ice-cream isn't sounding like enough. No? Well hows about some homemade ice-cream :) Coconut-y, Oreo-y goodness. I got this recipe from this book. Here's the recipe.
1 fourteen oz can coconut milk
1/3 c sugar
2 TBS cocoa
10 crushed Oreos
Combine the coconut milk, sugar, and cocoa powder in a blender and blend for 20 seconds. Pour the liquid into the bowl of an ice cream maker and churn according to the manufacturer's directions. In the last 5 minutes of churning, add the crushed Oreos. Transfer the ice cream to a plastic container, cover, and store in freezer until ready to eat.

Man. See? I told you I've been busy! But summer's almost over and school starts next week. Gotta live up what time I have left! Oh, and this school year's gonna be big. I can feel it.
