Cheesecake and Doughnuts

So in one of my classes we did an assignment where we had to split into groups, pretend that we are lost in the wilderness, and then choose out of a list what items we wanted to save our lives. One of the guys in my group took upon the title of ring leader and mostly he chose the items that we should use. Turns out all he chose were the wrong ones bahaha! So, jokingly, I said that because he killed us all, he owed me cheesecake and the rest of my class doughnuts. I was kidding, but he really brought it!! Everyone loved their doughnuts and I absolutely loved the cheesecake. It was so, so, so good :)

Buttermilk Pancakes and Cake

So once upon a time I had a ridiculous amount of Buttermilk to use, because I bought waaaaay too much for a different recipe that will be posted shortly. So I had to think of ways to use it up! So I googled for recipes and found one for buttermilk pancakes and buttermilk cake! Sounds good right? Well, they were good! The pancakes had an absolutely fantastic taste to them and were so soft and moist. The cake was too die for! it was a tea cake kind of deal, so it was really light and not too sweet. Which is perfect for a treat when you don't want to kill yourself with sugar!

White Hot Chocolate and Carrot Cake

It's fancy dancing time! Today was the Institute Fall Formal and because my house is so cool, we had a giant group :) While I was working, the other girls were awesome and made a delicious spaghetti dinner with sauce, salad, and garlic bread :) After we were done dancing the night away, we came back to the house for some strangely yummy white hot chocolate (k it only says 1 tsp of vanilla, but we ended up putting in like 1 1/2 TBS haha just go by the taste you like!) and some freaking FANTASTIC carrot cake that Ben and I made :) Now, that's what I call a sweet success :)

Chocolate Pudding Cake

What's up fellow bloggers? Alright, this is my first attempt at my own blog, so I hope all goes well :) Now! I'm back down at the wonderful Cedar City to attend my second year at the best college ever, Southern Utah University. I love this school so flipping much and will NOT go anywhere else for my education. I've made great friends, learned a lot of educational and social lessons, have made fantastic memories, and can't wait to see what this year has in store :)
So there's something you should know about me. Years ago, I wasn't really happy with the way I was fittin into clothes. So I decided to change that. After a plethora of attempts, I found a life habit that worked like magic. I got rid of all sweet or treats in my diet, except for one day of the week. The day I chose was Monday. Why Monday you may ask? Well, A. Everyone hates them, so why not make Monday a better day by getting my weeks worth of sugar in it, eh? ;) B. I am LDS and my family and I do FHE every Monday night, which usually includes a delicious treat and I did NOT want to have to pass those up each week. So the healthy eating habit began. It took a complete year to actually be good at it (there were many days where I "cheated"), but it finally became a habit and IT WORKED. I instantly noticed a difference and loved the results. So, 4ish years later, I'm still doing the same thing. If you're wanting to lose weight, this is an EXCELLENT way to do so. It's very hard to reject a delicious brownie the day after (or especially before) your treat day, yes, but your body will thank you every day you do it.
SO all that being said, I do love my Mondays. They are my favorite days. I call them my happy days :) And I usually celebrate by making something yummy for my tummy on these days :) Being back at school in an unfamiliar kitchen and not a lot of ingredients, I looked through my mom's blog (click here to visit this blessed site) and found the perfect thing. Hollilyn's Chocolate Pudding Cake. This dense, chocolaty, heavenly goodness is to die for! It's ridiculously easy to make and will satisfy and chocolate craving. Just be sure to have a glass of milk ready ;) PS please be so kind as to ignore the horrible quality of the picture :P Hopefully those will get better as time progresses.
